【新北市訊】大寒是二十四節氣最後一個節氣,也是冬季轉春季前的收尾,晝夜溫差較大,民諺有云:「大寒大寒,防風禦寒,早喝人參黃耆酒,晚服杞菊地黃丸」,意思是為了順應季節的變化,除了注意防風保暖外,傳統飲食也應以禦寒滋補的料理為主,不妨趁著適逢新北市貢寮鮑產季,換換口味,來道口味平和補氣又養生的黃耆枸杞九孔湯。

「貢寮鮑」是新北市貢寮地區養殖九孔及鮑魚的統稱,生長在東北角沿岸純淨海域的貢寮鮑,飼養於最貼近其自然生活環境的潮間帶養殖池,加上只餵食天然海藻及無化學藥物的使用,因此生產的貢寮鮑肉質緊實、口感鮮甜Q彈,是民眾可以安心食用的天然食品。

新北市貢寮龍蝦大王餐廳老闆林永斌表示,大寒前後日夜溫差大,來東北角旅遊一定要注意防風禦寒,而該餐廳為了讓來訪的遊客可以紓心暢遊,加上適逢當地貢寮鮑正是盛產期,特別推出了美味可口補氣養生的黃耆枸杞九孔湯,益氣固表的黃耆與性平味甘的枸杞再搭配在地新鮮美味的九孔,就是一道溫補且不上火的美味湯品,讓到訪的遊客們在賞美景、品海珍之餘,也能暖暖身子避免寒氣的侵擾。此外,林老闆也不藏私,教大家如何在家煮這道湯品,首先你需要將買回家的九孔川燙備用,然後將沖洗乾淨的黃耆、枸杞及紅棗放入鍋中,加水至八分滿悶煮約10分鐘,再加入川燙好的九孔悶煮3分鐘就完成了。

新北市漁業處長張麗珍表示,貢寮在地生產的貢寮鮑是高貴卻不貴的本土優質水產,每年的11月至翌年3月期間是貢寮鮑的盛產期,此時的貢寮鮑肉質最為飽滿鮮甜,不論是買回家補充營養還是去貢寮當地品嘗道地的貢寮鮑料理,都是的絕佳選擇。
